About the Book
My name is Amine Triai, I am an amateur cook with a passion for traditional cuisines, embarked on an extraordinary journey across 20 African countries to uncover and document the continent's rich culinary heritage. This adventure, driven by a deep fascination with Africa's diverse food landscape, transformed into a mission of preservation and celebration.
Traveling through countries like Senegal, Mali, Morocco, and Ivory Coast, I discovered a treasure trove of unique dishes. In West Africa, Jollof Rice became a highlight, with its vibrant, spicy flavors and regional variations. East Africa introduced the tangy Injera and spicy Doro Wat of Ethiopia, showcasing communal dining traditions. North Africa's Morocco offered the aromatic Tagine, a testament to centuries of cultural exchange, while South Africa presented Bobotie, reflecting its diverse cultural influences.
Despite challenges such as language barriers and sourcing authentic ingredients, Amine's journey deepened the connection to the food and the people behind it. Engaging with village elders and home cooks, I captured the stories and traditions that make each dish unique.
The culmination of this journey is a series of cookbooks, offering readers a window into Africa's culinary diversity. Through these books, I share not only recipes but also the love, resilience, and communal spirit that define African food culture.
